Stewed potatoes greek recipe

Ingredients

- 1 kg potatoes
- 6-8 tablespoons olive oil
- 1 onion
- 2 cloves garlic
- 1 tablespoon chopped celery
- 1 carrot
- 350 g peeled tomatoes
- salt, pepper

Peel the potatoes, wash and cut into pieces.
Peel the onion and the garlic cloves and chop finely.
Wash the celery leaves, dry and chop.
Pour the olive oil in a casserole, heat and sautè onion and garlic, stirring with a wooden spoon.
Add the carrot, peeled, washed and cut into slices and sautè.
Add pureed tomatoes, chopped celery, salt, pepper and cook for a few minutes.
Add the potatoes, salt and about one cup of hot water. The potatoes should be half-covered by the liquid.
Cover the casserole and cook the potatoes, over medium heat, for 30-40 minutes, until they are ready and the sauce is almost dry.
If during cooking the sauce gets too dry, add more hot water.
Serve stewed potatoes hot!
