Ingredients

  • 500 g octopus
  • 30 g  olive oil
  • 200 g onions
  • 2 tablespoons vinegar
  • 30 g white wine
  • 1 clove garlic
  • 1 bay leaf
  • 1 sprig rosemary
  • 200 g  ripe tomatoes or can tomatoes
  • salt, peppercorns

Stewed octopus greek recipe, cooked with tomato sauce and onions, an easy dish, that only requires time for cooking.

Make an incision at the base of the head of the octopus and remove its contents (the soft, gelatinous part and the black liquid). Eliminate eyes and every hard part.

Cut the tentacles and head in pieces. Wash and drain the octopus pieces .

Peel the onions and leave them whole. Peel the clove garlic too.

Blanch the tomatoes in boiling water, peel them, remove seeds and  vegetation water and cut into pieces.

If you use can tomatoes, cut into small pieces or, if you prefer, crush them.

Put all ingredients in a saucepan, bring to a boil and cook over low heat and covered saucepan for about an hour, stirring occasionally. When cooked, the sauce iwill be reduced and the octopus will be tender.

If, during cooking, the sauce is too dry, add hot water.

If at the end of cooking, the sauce is too liquid, uncover and cook for a few minutes over medium-high heat, so the excess liquid will evaporate.

Stewed octopus greek recipe is ready to be tasted! Serve hot or warm!

Advices

You can prepare the octopus using half  fresh tomatoes and half canned tomatoes. This way the sauce will be more tasty but also more dense and colorful.

Add salt  when the  octopus volume will be reduced, otherwise  it will be salty.
