Spinach and rice is a traditional Greek dish. A vegetarian dish where the presence of spinach is predominant compared to rice, if, in fact,we translate literally σπανακορυζο means spinach with rice. Easy to prepare, tasty and rich in vitamins and minerals. It ‘s better yo make with fresh spinach.

Ingredients

- 1 kg spinach
- 150 g rice
- 80 g olive oil
- 1 onion
- 1 bunch dill
- 2 cups water
- salt, pepper
- lemon juice

Remove any damaged or dry leaves of the spinach, cut off the spinach roots and discard.
Wash the spinach by soaking in cold water. Drain the spinach and repeat soaking and draining till it’s clean.
Put the spinach in a salad spinner to remove any excess moisture.
Put the spinach, a few at a time, on a cutting board and cut coarsely into pieces of about 3 cm.
Take a large pot and pour the olive oil. Heat and saute chopped onion.
Add spinach and let wilt, stirring occasionally.
Add salt and pepper and 2 cups of water.
Let boil, over medium-low heat and covered pot for 20 minutes. Add rice and chopped dill and, if needed more hot water.
Add salt, i f necessary, and boil over low heat and covered pot, stirring often, until the rice is almost tender.
When cooked, the rice should not be dry, indeed must have enough liquid.
Serve spinach and rice warm, seasoned with lemon juice!
