Spaghetti with zucchini pesto is a very tasty dish. A delicious dish, easy and quick to prepare, perfect for a light lunch on hot summer days!

Ingredients

- 400 g spaghetti
- 400 g zucchini
- 1 bunch parsley
- 20 mint leaves
- 1 clove garlic
- 80 g Parmesan cheese
- 40 g almonds
- 100 ml olive oil
- salt, pepper

Spaghetti with zucchini pesto, delicious, easy and quick!
Wash the zucchini and remove the ends. Cut them in four pieces, remove the pulp and cut the pieces in two parts .
Cook the zucchini in boiling, lightly salted water.
Drain the zucchini and let cool.
Wash the parsley and mint and dry gently.
Put the zucchini in a food processor with the other ingredients, and process until smooth, adding 100 ml of olive oil slowly. Add salt and pepper.
If the pesto is a little too thick, you can add a little bit more of oil, but don’t overdo it
Meanwhile, cook the spaghetti in boiling salted water.
Drain the pasta and pour the zucchini pesto over it and toss to coat.
Serve the spaghetti with zucchini pesto immediately!
