Remove any damaged or dry leaves of the spinach, cut off the final part of the stems and discard.
Clean the spinach by soaking in cold water. Drain the spinach and repeat soaking and draining till it’s clean.
Put the spinach in a salad spinner to remove any excess moisture.
Take a large pot, pour 2 tbsp olive oil, heat and add the spinach.
Cover the pot and cook, over medium-low heat, with water which will eliminate the spinach.
Cook for about 15 minutes, adding salt when the volume of spinach will be decreased.
Once cooked, drain and squeeze the spinach well.
In a pan, put enough olive oil to season spinach and wither the onion finely chopped.
Add spinach and cook in the oil, for a few minutes, stirring occasionally.
Add more salt if necessary.
