The salad of beetroots and yoghurt is a fresh and tasty side dish. This salad is easy to prepare with a few simple ingredients, the result is still a good dish and very healthy.

- 4 beetroot
- 200 grams of greek yogurt
- 1 clove of garlic
- 3 tablespoons olive oil
- 1 tablespoon vinegar
- 1 tablespoon mayonnaise
- salt

You can prepare your salad with fresh beetroots, if it is the time of year when you can find them, otherwise you can use those packed that have already been boiled.
If you use fresh turnips, wash well without peeling. Put them in a saucepan with water and bring to boil. Simmer for about 1 hour (until you can pierce them with a fork).
Drain and let cool. Remove the skins and cut the beetroots into small pieces. Season with salt, oil and vinegar.
Crush the garlic clove and mix with the yogurt. United yogurt a tablespoon of mayonnaise and mix well.
Combine the yogurt with red turnips and stir to obtain a homogeneous mixture.
