- 1 kg potatoes
- 40 g butter
- 60 g grated Parmesan cheese
- 60 g grated pecorino cheese
- 3 eggs
- 1/2 bunch parsley
- 100 prosciutto
- 100 g mozzarella
- 100 g spicy provolone
- 40 g breadcrumbs
- salt, pepper

Potato gateau italian recipe for a rich main dish, easy to prepare.
Wash the potatoes and boil until tender, about 30-40 minutes, depending on the size.
Drain the potatoes, let cool and peel them; run the potatoes through a food mill into a bowl.
Add salt and pepper, stir in the butter, parmesan and grated pecorino cheese, egg yolks, chopped parsley. Add prosciutto, which you bought in a single slice, and you cut into cubes.Mix well, with a wooden spoon, until all the ingredients are evenly distributed.
Whip 2 egg whites and incorporate delicately to the potato mixture.
Cut mozzarella and provolone cheese into slices.
Butter a baking dish, 22 cm in diameter, sprinkle with 20 g of bread crumbs and spread out half potato mixture.
Cover with mozzarella and provolone slices and spread out the remained potato mixture.
Top the cake with 20 g of breadcrumbs and a few nobs of butter here and there.
Bake the cake in a preheated oven, 200 °C (392° F), for 30 minutes.
Let the potato gateau cool before cutting and serving.
Note
If you prefer, you can use smoked provolone cheese.
