Ingredients

  • 600 g cod fillets
  • 1 clove garlic
  • 1 onion
  • 1/2 lemon juice
  • 1 lemon rind
  • 4 tablespoons olive oil
  • 100 ml fish broth
  • origan
  • salt, pepper

Lemon cod recipe for a tasty and light dish!

Wash the lemon, remove the rind (only the yellow part) and cut it into strips; blanch for 2 minutes in boiling water; drain and keep aside.

Peel the onion and chop finely.

Peel the garlic and crush slightly.

Heat the olive oil in a pan and saute the garlic clove.

Arrange the cod fillets into the pan, season with salt and pepper, and cook till they get brown, about 8-10 minutes, turning them.

When the cod fillets are golden brown on both sides, remove from the pan and keep aside, covered.

Add chopped onion, in the same pan, and let wither without letting it get brown.

Pour the lemon juice into the pan, passing it throught a colander, and let it reduce.

Pour the fish broth into the pan and let reduce by half.

Add the strips of lemon rind and the cod fillets and let them warm up.

Sprinkle with some oregano and serve the cod fillets warm!
