Custard recipe

The custard is a preparation made with milk, eggs, sugar and flour or other fillers, such as corn starch or rice, used to stuff as many sweet cream puffs, cakes, sponge cake, cannoli. The custard is served as a dessert spoon or is used to make puddings and frozen desserts.

Ingredients

  • 450 g milk
  • 100 g sugar
  • 3 egg yolks
  • 50 g cream
  • 40 g corn starch
  • 1/2 tablespoon butter
  • 1 teaspoon of vanilla extract

Meanwhile, separate the egg yolks from the whites. Whip the egg yolks with the sugar.
Dissolve the corn starch in the cup of milk (warm or at room temperature) that you have kept parte.Versate the liquid obtained in the mixture of egg yolks and sugar. Add the vanilla and stir until mixture is smooth and free of lumps.
When the milk, you put on the fire with the cream is starting to boil, add, little by little, the mixture of eggs, sugar, milk and cornstarch and cook over low heat, stirring constantly, until the cream thickens. At the beginning you can use a whisk to mix the ingredients better.
Turn off the heat and add the butter cream, stirring until it has melted.
Your custard is ready!
Advices

By changing the doses of some ingredients you can get different textures. Increasing the dose of corn starch will have a denser custard , while decreasing, you will have a less dense custard.

If you do not want to use cream, you can replace it with the same amount of milk.

There are many variations of custard like diplomatic custard , which is obtained by mixing  whipped cream, chocolate cream, adding dark chocolate. In addition, you can flavor the cream with vanilla or with lemon zest or orange zest.
