Cod in aromatic crust recipe is easy to prepare, in a short time. Cod, covered by an aromatic and crisp crust, baked in the oven, remains tender but firm. A delicious main course, perfect for a lunch or dinner!

Ingredients

  • 300 g cod fillets
  • 2 tablespoons parsley
  • 1 teaspoon grated lemon peel
  • 2 tablespoons whole cereals
  • 4 tablespoons dry breadcrumbs
  • 2 tablespoons fresh breadcrumbs
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • salt and pepper

To prepare cod in aromatic crust, you can buy fresh or frozen cod.

Chop with your  hands the whole cereals or, do as I did, use the mortar to chop fine.

Put in a bowl the melted butter, grated lemon peel, finely chopped parsley, cereals, bread crumbs (dry and fresh), and some pepper.

Mix all ingredients, add the olive oil and mix again.

Brush a baking dish with some olive oil and place the cod fillets, after seasoning with salt.

Top the cod fillets  with the mixture for the aromatic crust, making sure to cover the fish well.

Bake in a preheated oven, 200 ° C (392°F), in convection oven, in an intermediate position, for 12-15 minutes. The time can vary, depending on the oven and the thickness of the cod fillets.

If you like the taste of lemon, you can add another teaspoon of grated lemon peel.
