This is a very simple recipe for a cheese and tomato puff tart, in a short time. This dish can be served as an appetizer or as a main course, with a rich salad, for a light dinner. A perfect summer dish, easy to make, I’m sure you will enjoy!

Ingredients

- 1 pack ready rolled round puff pastry (230 g)
- 400 g ricotta cheese
- 100 g feta cheese
- 300g cherry tomatoes
- thyme
- olive oil
- salt, pepper

Take a round baking pan with 28 cm diameter. Brush the bottom and sides of the pan with olive oil, unroll the pastry and arrange it on the pan , leaving a part out of it.
Using a fork, prick the dough all over.
Salt the ricotta cheese, mix with feta cheese, add pepper and some thyme (about 1/2 teaspoon).
Mix the cheese and distribute on puff pastry.
Wash the tomatoes, dry them, cut in two parts and add salt.
Arrange the tomatoes on top of the cheese.
Sprinkle with some thyme and refold the puff pastry that is out of the pan towards the inside, so that it covers the cheese.
Bake in a preheated oven, at 180 °C (356° F), for 40 minutes.
Remove from oven, let cool and drizzle with olive oil.
Your cheese and tomato puff tart is ready!
Note
The doses are for 4 persons if the dish is served as a main course. If, instead, you serve it as a starter it is enough for 10-12 persons.
