Baked zucchini

Baked zucchini  with  fresh tomatoes, two kinds of cheese and  thyme, is a delicious and light dish . Zucchini prepared with this recipe can be enjoyed for lunch and dinner, as a main dish, or can be served as a side dish. A perfect dish for vegetarians.

  • 700 g zucchini
  • 1 onion
  • 2 cloves  garlic
  • 1 tablespoon butter
  • 2 tomatoes
  • thyme
  • 2 tablespoons flour
  • 1 tablespoon sugar
  • 2 eggs
  • 100 ml  cream
  • 20 g grated pecorino cheese
  • 40 g grated parmesan cheese
  • salt, pepper

Eliminate the ends of the zucchini, wash and cut into round slices.

Take two ripe tomatoes, wash them, cut them in half, remove the seeds and cut into cubes.

Chop finely the onion and the garlic cloves.

Put the butter in a deep saucepan and melt over low heat.

Add onion and garlic and saute.

Add  tomatoes and zucchini and cook, stirring, for a few minutes.

Add a pinch of thyme and flour and stir well to mix.

Season with salt and pepper, remove from heat and pour into a buttered pan.

Put the eggs in a bowl, add the sugar and the cream, salt, pepper and beat well with a whisk.

Pour the mixture over the zucchini and sprinkle over the grated pecorino and parmesan cheese.

Bake in preheated oven at 180° C 8356° F),  for about 30 minutes, until golden.

Serve baked zucchini hot!
