This baked vegetables in tomato sauce recipe, is a delicious greek dish, called briam. We serve it as a main dish, accompanied by feta cheese. A dish rich of many seasonal vegetables, which can also be served as a side dish. A very tasty vegetarian, healthy and light dish.
Baked vegetables in tomato sauce briam

Ingredients

- 2 ripe tomatoes
- 350 g potatoes
- 350 gr eggplants
- 350 g zucchini
- 3 carrots
- 2 onions
- 1 bunch parsley
- 2 cloves garlic
- 2 peppers
- 300 gr peeled tomatoes
- 1/2 cup olive oil
- salt, pepper
Instructions

Peel the potatoes, wash them and cut into cubes.
Remove the ends of the zucchini and eggplant, wash and cut into cubes.
Peel the carrots, wash them and cut into pieces, the same size of the other vegetables.
Wash the tomatoes, peel them and cut them into slices.
Arrange half part of tomatoes on a baking sheet, add salt and pepper and arrange the vegetables on them, after seasoning with salt and pepper.
Peel onions and garlic cloves and cut into pieces.
Wash the peppers, remove the stems and cut them in half. Remove the seeds and filaments.
Cut the peppers into pieces.
Put onion, garlic and peppers in a bowl, season with salt and pepper and arrange on the vegetables.
Add parsley, washed and chopped.
Arrange the rest of the tomatoes over the vegetables.
Pour mashed peeled tomatoes over the vegetables after seasoning with salt and pepper.
Pour olive oil over the vegetables.
Bake in a preheated oven, 200 °C (390° F), for 1 hour-1 and 1/2, stirring occasionally.
You don’t need to add water.During the first half hour, cook covered with a sheet of aluminum, to prevent the evaporation of liquids . If necessary, add hot water.
If, when the vegetables start to boil, it seems that the temperature is too high, you can decrease it to 180 °C (356° F).
Serve baked vegetables in tomato sauce hot!
Idea
If vegetables require liquid, you can add some white wine instead of water.
Note
Doses refer to the dish served as a main dish. So, if you intend to serve it as a side dish, reduce the dose.
