Artichokes with garlic, olive oil and parsley

Artichokes with garlic, olive oil and parsley, a quick and easy recipe to prepare, with a few, simple ingredients, for a very healthy dish.

Artichokes have very few calories, they are high in fiber, and rich in potassium. They also have a good amount of calcium, phosphorus, magnesium and iron.

Ingredients

  • 10 artichokes
  • 50 ml olive oil
  • 2 cloves garlic
  • 1/2 bunch parsley
  • 150 ml water
  • 1 lemon juice
  • salt, pepper

What takes more time in the realization of this recipe is  cleaning the artichokes.

Remove the leaves of the artichokes. Cut the artichoke in half lengthwise and scoop out and discard the hairy choke and thorny inner leaves.

Put the clean artichokes in a bowl with water and  lemon juice., to slow the oxidation.

Remove the terminal and the outer part of the stems, and dropp the clean stems in the lemon water.

If the inner leaves of the artichokes are tender, you can keep them.

Pour the olive oil in a pot, add the artichokes, cut into 2 or 4 parts. Add parsley and garlic cloves chopped. Season with salt and pepper and cook over medium-high heat for a few minutes.

Pour the water into the pot, cover and cook, over medium heat, for about 15 minutes.

Stir occasionally and add hot water, if necessary.

If after cooking there is still some water left, uncover the pot and simmer for a few minutes until any remaining liquid is evaporated.

Add salt if necessary and serve!

Note: Cooking time may vary depending on the size of the artichokes.

You can check the cooking stabbing an artichoke with a fork. When the artichokes are tender they are ready.
