Ingredients

- 2 apples
- 200 ml sparkling wine
- 4 tablespoons sugar
- 1 lemon
- 16 savoiardi biscuits
- 3 teaspoons icing sugar
for the custard
- 4 tablespoons condensed milk
- 2 and 1/2 tablespoons corn flour
- 3 gelatin sheets
- 100 g whipped cream

Peel the apples and cut into small pieces.
Cook the apples in a saucepan with the sugar, the lemon juice, 100 ml water and the sparkling wine.
When the apples are tender, after about 15-20 minutes, drain and set aside the syrup that has been formed.
Heat the milk with 250 ml water and, before it begins to boil, add the flour. Cook over low heat, stirring constantly, until you get a thick custard.
Add the gelatin sheets to the custard, after passing them under cold water, and stir.
Wet 8 savoiardi in the apple’s syrup of and place them, one next to each other, on a mold or a baking dish.
Whip the cream and mix in the custard. Add apples too.
Pour the apple mixture on the savoiardi layer.
Cover with the rest of savoiardi, slightly soaked in apple’s syrup.
Place the apple pie in the refrigerator for 4-5 hours.
After this time you can serve the apple pie with savoiardi biscuits, after strewing the surface with icing sugar!
Advice
Sprinkle sugar icing on the cake of apples passing it through a sieve to obtain a better result.
