I traguardi importanti meritano di essere festeggiati! Ed è per questo che il ristorante da Tonino di Salvatore Apreacelebra i suoi 30 anni di attività con una serie di eventi. Il primo è quello di venerdì 21 aprile con ospite lo chef Pasquale Tozzi, membro assieme a Salvatore del gruppo Le Collectionneurs, nonché suo amico. Una cena a 4 mani che vede i due chef impegnati nella realizzazione di 3 piatti a testa: due modi diversi di intendere la cucina a confronto, due grandi personalità al lavoro per omaggiare uno dei più importanti ristoranti di Capri.
Ma questo è solo l’inizio: i festeggiamenti proseguono il 9 maggio con lo chef Chris Oberhammer, l’11 giugno con lo chef Valentino Marcattilii e poi il gran finale, il 23 settembre, in collaborazione con RISO BUONO, con la partecipazione degli chef Oliver Glowing e Roberto Di Pinto.
Nel frattempo vi proponiamo la ricetta di uno dei piatti che realizzerà Salvatore Aprea per l’evento del 21 aprile: Riso “Buono”, piselli, rosmarino e prosciutto crudo!
Ingredienti per 4 persone
320g riso “buono” carnaroli
1L brodo vegetale
40g vino bianco
Q.b. Sale fino
50g burro
150g burro al rosmarino
80g parmigiano grattugiato
150g ragù di prosciutto crudo
120g di crema di piselli
60g piselli freschi sbianchiti
16 fiori di rosmarino
Per la crema di piselli
150g piselli freschi sgusciati
1/2 cipolla tritata
30g olio extravergine
Q.b. Brodo vegetale
Q.b. Sale fino
Preparazione
Fare un fondo di cipolla e far rosolare con l’olio extravergine, aggiungete i piselli e coprire con il brodo; aggiustare di sale e far cuocere per poco tempo, frullare e mantenere in caldo.
Per il ragù di prosciutto crudo
300g prosciutto crudo macinato
1 carota
1 costa di sedano
1 cipolla
500g passata di pomodoro
1/2 bicchiere di vino bianco
40g olio extravergine
Q.b. Pepe
Procedimento
Fare un fondo di cipolla, sedano e carota tutto tritato finemente e far stufare con olio extravergine. Aggiungere il prosciutto crudo macinato e far rosolare, sfumare con il vino e proseguire la cottura con la passata di pomodoro, far cuocere ed aggiustare di pepe. Mantenere in caldo.
Burro al rosmarino
150g burro
2 rametti di rosmarino
Procedimento
Mettere tutto sottovuoto e cuocere a bagnomaria a 75°c per 20 minuti. Aprire, filtrare e raffreddare.
Procedimento per il risotto
1)In un pentolino capiente mettere i 50g di burro e riso e far tostare fino a che non si riuscirà a stringerlo nella mano, aggiungere sale
2)sfumare con il vino bianco e far asciugare
3)coprire con il brodo e cuocere per circa 14 minuti a fiamma bassa coprendo sempre con brodo e mescolando sempre aggiustando di sale
4)Una volta cotto mantecare fuori dalla fiamma con il burro al rosmarino ed il parmigiano
Finitura del piatto
5)In un piatto leggermente fondo adagiare sul fondo il ragù di prosciutto crudo e stenderlo
6)coprire con il risotto
7)sopra mettere la crema di piselli
8) completiamo con i piselli sbianchiti e i fiori di rosmarino
Important achievements deserve to be celebrated! And this is why the restaurant “da Tonino” by Salvatore Aprea celebrates its 30 years of activity with a series of events. The first will be on Friday, April 21st with chef Pasquale Tozzi as guest, a friend of Salvatore who is also a member, with him, of the group Le Collectionneurs. A four hands dinner that sees the two chefs engaged in the creation of three dishes each: two different ways of interpreting the kitchen in comparison, two great personalities at work to pay homage to one of the most important restaurants of Capri.
But this is only the beginning: the celebrations will continue on May 9 with chef Chris Oberhammer, on June 11 with chef Valentino Marcattilii and then the grand finale, on September 23, in collaboration with Riso Buono, with the participation of chefs Oliver Glowing and Roberto Di Pinto.
Meanwhile, we propose the recipe of one of the dishes that Salvatore Aprea will preparefor the event of April 21: Rice “Buono”, peas, rosemary and raw ham!
Ingredients for 4 people
320g “Buono” Carnaroli Rice
1L vegetable broth
40g white wine
Q.s. Salt to taste
50g butter
150g butter with rosemary
80g grated parmesan cheese
150g ragout of raw ham
120g of cream of peas
60g freshly blanched peas
16 flowers of rosemary
For the cream of peas
150g fresh shucked peas
1/2 chopped onion
30g extra virgin olive oil
Q.b. Vegetable broth
Q.b. Fine Salt
Preparation
Make an onion gravy and sauté with the extra virgin olive oil, then add the peas and cover with the broth; add salt and cook for a short time, blend everythingand keep warm.
For the meat sauce of raw ham
300g raw ground ham
1 carrot
1 stick of celery
1 onion
500g tomato puree
1/2 glass of white wine
40g extra virgin olive oil
Q.s. Pepper
Proceeding
Make a base of finely chopped onion, celery and carrot and stew with extra virgin olive oil. Add the minced ham and sauté, add the wine and continue cooking with the tomato puree, cook and add pepper. Keep warm.
Rosemary butter
150g butter
2 sprigs of rosemary
Proceeding
Vacuum everything and cook bain-marie at 75 ºC for 20 minutes. Open, filter and let cool down.
Procedure for the preparation of the risotto.
1) In a large saucepan put the 50g of butter and toast the rice until you can hold it in your hand, add salt
2) Blend with white wine and let dry
3) Cover with broth and cook for about 14 minutes at low temperature, always covering with broth and stirring and adjusting of salt
4) Once cooked, stir in the rosemary butter and parmesan cheese.
Finishing the dish
5) In a shallow dish, lay the meat sauce of raw ham and spread it out
6) Cover with risotto
7) Put the cream of peas over
8) Complete with blanched peas and rosemary flowers.
