Zucchini and smoked salmon pasta

 PASTA with ZUCCHINI and SMOKED SALMON

INGREDIENTS (for 4 people)

  • 350 g of short pasta
  • 1 scallion
  • 3 zucchini (courgettes)
  • 200 g smoked salmon
  • salt and black pepper
  • lemon zest
  • extra virgin olive oil

DIRECTIONS

Mince the scallion finely.

Discard the ends from the zucchini, wash and dice them.

Chop the smoked salmon.

In a large non-stick pan heat 3 table spoons extra vergin olive oil, add the scallion and saute until slightly softened and fragrant.

Add the zucchini and cook over a low heat for about 10 minutes; stir frequently so that the vegetables do not burn.

Then add the smoked salmon and mix.

Season to taste with salt and black pepper and cook for some more minutes.

Meanwhile take a pot, fill it with water and put it on the stove, heat it until it boils. Put a lid on to make it boil faster. When the water boils, add a generous pinch of salt.

Then put the pasta in the water and cook as indicated on the package.

Strain the pasta out of the water and pour it in the pan mixing it with all the other ingredients. Add one or two table spoons of cooking water if necessary.

Serve your zucchini and smoked salmon pasta with some lemon zest.
