Pasta with cauliflower recipe

Are you looking for a simple and yummy recipe that does not involve much time? Try this pasta with cauliflower: so good and so easy!

INGREDIENTS (for 3 people)

  • 270/280 g of short pasta
  • 300 g of cauliflower florets
  • 1 garlic clove
  • black olives
  • 4 dried tomatoes in oil
  • parsley
  • dried chili pepper
  • extra virgin olive oil
  • salt


Wash parsley, dry and mince it finely. Put aside.

Wash the cauliflower florets and chop them.

Drain the dried tomatoes and slice them.

In a large non-stick pan heat 3 tablespoons extra virgin olive oil, add the minced garlic and the dried chili pepper (its quantity is based on your personal preference) and saute.

DSCF8769Add the cauliflower and some tablespoons of water.

DSCF8771Cover with a lid and cook over a low heat for 7/8 minutes stirring frequently until the cauliflower florets are tender-crisp.

Then add some black olives and the dried tomatoes and cook for some minutes.

DSCF8775Finally add the parsley. Season with salt.


Meanwhile take a pot, fill it with water and put it on the stove, heat it until it boils. Put a lid on to make it boil faster. When the water boils, add a generous pinch of salt.

Then put the pasta in the water and cook it according to package directions.

Strain the pasta out of the water and pour it in the pan mixing it with all the other ingredients. Add one or two tablespoons of cooking water if necessary.

Drizzle olive oil onto your cauliflower pasta and serve immediately.
