Omelette with ham and cheese

This omelette with ham and cheese is a very easy and tasty recipe. Try it….everybody will love it.

frittata rustica -


  • 6 eggs
  • breadcrumbs
  • a bit of milk
  • ½ red onion
  • 100 g cooked ham in one slice
  • 100 g smoked scamorza Italian cheese
  • extra vergin olive oil
  • salt


Dice the ham and the cheese.

Sook breadcrumbs in milk.

DSCF5681Mince the onion finely.

In a large non-stick pan heat some extra vergin olive oil, add the minced onion and saute.

DSCF5683Drain the breadcrumbs and add them, too.

DSCF5685Add a generous pinch of salt, mix and cook for some minutes, then remove from heat and set aside.

Crack the eggs into a bowl and lightly beat with a fork. Add a pinch of salt and the mixture of onion and breadcrumbs.

DSCF5687Then add the cooked ham and the scamorza cheese.

DSCF5688Combine all the ingredients together.

Heat some oil in a non-stick pan; pour the egg mixture quickly into the pan and move the pan around to spread it out evenly.

DSCF5690Cover and let the omelette set on a low heat.

When the underside is golden, turn the omelette with ham and cheese over and cook the other side.

DSCF5691Turn the omelette out of the pan onto a plate.


This omelette with ham and cheese is delicious both warm and cold.
