Croccante mandorlato
La ricetta va bene anche se usate nocciole o noci, a voi la scelta.
ingredienti:
500 gr mandorle pelate
500 gr zucchero
4 cucchiai di acqua
scorza grattugiata di 1 arancia
1 cucchiaino olio di mandorle dolci
ricetta: se avete mandorle da pulire, l’ideale è tostarle 2 minuti nel forno dopo averle sgusciate, la pellicina che le rivedte si toglierà molto facilmente. Se non volete usarle intere, spezzatele un po’ con il batticarne.
Fate sciogliere lo zucchero nell’acqua in una pentola, mescolando con un cucchiaio di legno. Serviranno circa 10 minuti per ottenere uno sciroppo dorato. Unite mandorle e scorza e girate altri 10 minuti, finché il tutto è brunito. Ungete la carta forno con l’olio di mandorle e spalmate il composto. Fatelo intiepidire ma tagliarelo a quadrati prima che indurisca del tutto.

500 gr sugar
4 tablespoons of water
grated zest of 1 orange
1 tsp sweet almond oil
recipe: if you have almonds to clean, the ideal is to toast them for 2 minutes in the oven after having shelled them, the skin you see them will come off very easily. If you don’t want to use them whole, break them up a little with a meat tenderizer.
Melt the sugar in the water in a saucepan, stirring with a wooden spoon. It will take about 10 minutes to get a golden syrup. Add the almonds and zest and turn another 10 minutes, until everything is browned. Grease the parchment paper with almond oil and spread the mixture. Let it cool but cut it into squares before it hardens completely.
