Spaghetti con salsiccia e pesto

Gli spaghetti con salsiccia e pesto sono un primo piatto veloce e molto semplice da preparare. La ricetta è davvero semplicissima e anche velocissima. Il pesto genovese e la salsiccia rendono questo primo piatto molto gustoso. Io li preparo molto spesso, è il piatto preferito quando ho poco tempo da dedicare alla cucina. Poi Lorenzo, il mio secondo genito, è un amante del pesto genovese, puoi utilizzarlo come meglio credi e lui è sempre contento. Solo pochi ingredienti e tanto gusto che dovete assolutamente provare. Con questo condimento potete utilizzare vari formati di pasta: pasta lunga, come in questo caso, o pasta corta, tipo fusilli, casarecce, penne.

Ingredienti per 4 persone

  • Spaghetti grossi                     g 320
  • Pesto genovese                     g   80
  • Salsiccia                                 g 300
  • Olio extravergine di oliva       q.b.
  • Vino bianco                            1/2 bicchiere
  • Parmigiano grattugiato          4 cucchiai abbondanti
  • Sale e pepe                           q.b.

Preparazione

Iniziate col mettere l’acqua per la pasta sul fuoco, così guadagnerete ulteriore tempo.

In un tegame capiente  mettete a scaldare l’olio a fuoco dolce. Intanto spellate le salsicce e fatele a tocchetti, quindi fatele rosolare per circa 5 minuti. Sfumate con il mezzo bicchiere di vino bianco. Quando il vino si sarà consumato mettete la fiamma al minimo.

A bollore dell’acqua aggiungete il sale grosso e gli spaghetti. Cuoceteli al dente. Scolate la pasta e versatela  nel tegame con le salsicce (tenendo un mestolo abbondante di acqua di cottura da parte ),  amalgamate per un minuto spadellando per benino. Spegnete, aggiungete il pesto, il formaggio grattugiato e l’acqua di cottura della pasta nel caso risultasse troppo asciutto e continuate ad amalgamare. Spolverate con pepe macinato fresco e servire subito in tavola.
