Vegetarian Lasagna

Hi there,

one of the most famous Italian recipes abroad is lasagna. In this recipe there is no meat and it is amazing. When I cook this special dish I prefer to use only two different kind of vegetables: radicchio and broccoli. All you need is fresh vegetables, and other few ingredients. Let’s start to cook! 😀

Prep Time:  5 mins

Cook Time: 30 mins

Servings: 4

Ingredients:

  • 5 leaves of radicchio
  • 1 cup of green broccoli
  • 6 spoons of besciamella sauce
  • 4/6 fresh pasta sheets for lasagna
  • 2 spoons of Parmesan
  • 1 mozzarella (45 gr)
  • 2 spoons of olive oil
  • 50 gr of butter
  • salt

 

Directions:

  1. Boil radicchio for 3 minutes, drain and put it in a fry pan with butter, olive oil and salt. Cook for 7 minutes. Do the same with broccoli in a separate fry pan
  2. Layer in the following order:( 1)besciamella sauce, radicchio and fresh pasta sheets for lasagna, (2)mozzarella, besciamella sauce and fresh pasta sheets, (3) broccoli, besciamella sauce and fresh pasta sheets again.
  3. Cover with the rest of the vegetables, besciamella sauce and Parmesan.
  4. Bake in a prehated 180° Celsius oven for 20 minutes.

Tips: if you don’t like radicchio or broccoli try with zucchini and peppers.
