Have you ever cooked my Roasted Pumpkin Recipe? It is very easy to make and delicious. This roasted pumpkin recipe is completely vegan and rich in healthy spices.

Prep Time: 30 mins
Cook Time: 30 mins in a preheated oven to 200 degrees C
Servings: 4
Ingredients:
- 8 pumpkin slices with peel
- 1 tablespoon of powdered turmeric
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of red pepper
- garlic
- a pinch of salt
- one spoon of extra virgin oil
Directions:
- Cut pumpkin into similar slices
- In a bowl add powered ingredients
- Heat oven to 200 degrees C
- Place pumpkin slices on baking sheet. Add spices and drizzle with olive oil and rub on both sides of pumpkin. Season with salt and spices
- Roast for 30 minutes

I have to try this – sounds simple – but slicing pumpkin is a challenge – it’s soooo hard !
It’s very simple and tasty. You can use a big knife to slice the pumpkin , it should be easier π
