Spinach and Ricotta Gnudi Recipe

Gnudi are balls made of spinach and ricotta. This recipe comes from Tuscany and it used to be a peasant food because of its simple and cheap ingredients. Gnudi recipe is one of the most appreciated Tuscan dishes and it is pretty amazing. It can be served as a first dish instead of pasta.

Ingredients:

  • 300 grams of ricotta cheese
  • 600 grams of spinaches
  • 1 egg
  • 3 spoons of all purpose flour
  • salt
  • a pinch of black pepper
  • 3 spoons of grated Parmesan
  • 1 cup of tomato sauce
  • garlic
  • 2 tablespoons of extravirgin olive oil
  • a pinch of nutmeg

Directions:

  1. Boil spinach in salty water for 10 minutes, drain them and cut into small pieces using a knife
  2. In a bowl add together ricotta, an egg, nutmeg, black pepper, salt, grated cheese and spinaches
  3. Add flour a mix all ingredients together
  4. Cook tomato sauce in a frypan with garlic and olive oil adding hot water if necessary
  5. Shape gnudi into balls and cover with flour
  6. Cook gnudi in boiling water for few minutes and add a pinch of salt
  7. Drain gnudi and serve with tomato sauce
  8. Add extra Parmesan cheese on top
