Gnudi are balls made of spinach and ricotta. This recipe comes from Tuscany and it used to be a peasant food because of its simple and cheap ingredients. Gnudi recipe is one of the most appreciated Tuscan dishes and it is pretty amazing. It can be served as a first dish instead of pasta.

Ingredients:
- 300 grams of ricotta cheese
- 600 grams of spinaches
- 1 egg
- 3 spoons of all purpose flour
- salt
- a pinch of black pepper
- 3 spoons of grated Parmesan
- 1 cup of tomato sauce
- garlic
- 2 tablespoons of extravirgin olive oil
- a pinch of nutmeg
Directions:
- Boil spinach in salty water for 10 minutes, drain them and cut into small pieces using a knife
- In a bowl add together ricotta, an egg, nutmeg, black pepper, salt, grated cheese and spinaches
- Add flour a mix all ingredients together
- Cook tomato sauce in a frypan with garlic and olive oil adding hot water if necessary
- Shape gnudi into balls and cover with flour
- Cook gnudi in boiling water for few minutes and add a pinch of salt
- Drain gnudi and serve with tomato sauce
- Add extra Parmesan cheese on top
