Ho preparato questo risotto alla carbonara, sappiamo tutti che la carbonara è un primo piatto romano, mentre il risotto è milanese, la preparazione invece è stata fatta da una napoletana 😉 e adesso come la mettiamo? Scherzi a parte ma questo risotto è riuscito un capolavoro, buonissimoooo…😋
INGREDIENTI per 5 porzioni
600 g di riso per risotti
5 uova
150 g di guanciale
olio evo q.b.
prezzemolo tritato secco q.b.
aglio in polvere q.b.
brodo di dado q.b.
pecorino q.b.
peperoncino rosso in polvere q.b.
sale q.b.
PREPARAZIONE
Tagliate il guanciale a listarelle e aggiungetelo in una padella con l’olio evo, poi unite il prezzemolo secco e l’aglio in polvere, il guanciale deve essere un rosa pallido.
Senza togliere il guanciale dalla padella, tostate il riso per circa 3 /4 minuti, deve cambiare colore.
Poi aggiungete il brodo di dado caldo e lasciate cuocere il riso, aggiungete del brodo ogni volta che serve.
Nel frattempo sbattete le uova da parte e aggiungete il pecorino.
Trascorso il tempo della cottura del riso, spegnete la fiamma e versate le uova con il pecorino che avete preparato precedentemente.
Mantecate velocemente e impiattate, aggiungete altro pecorino e una bella spolverata di peperoncino in polvere.
