abbiamo gustato un delizioso arrosto all\u2019inglese cotto al punto giusto, con un colore scuro esternamente e una carne rosata all\u2019interno. Un piatto estremamente facile da realizzare, l&#8217;importante rispettare i tempi di cottura per avere una carne cotta al punto giusto. Dovr\u00e0 essere anche ben asciutta per cui, se necessario, tamponarla con della carta assorbente.<\/p><div class=\"av-inner-blocks-content\">\n<div class=\"wp-block-altervista-steps-group\"><div class=\"av-inner-blocks-content\">\n<div class=\"wp-block-altervista-step media-position-bottom\">\n<p>Legare la carne con dello spago da cucina e infilare sotto di questo il rametto di rosmarino e le foglioline di salvia. Mettere la pentola sul fuoco e lasciarla scaldare bene. Aggiungere l\u2019olio e subito dopo la carne.<\/p>\n\n\n<\/div>\n\n\n\n<div class=\"wp-block-altervista-step media-position-bottom\">\n<p>Lasciare rosolare a fiamma vivace da tutti i lati, in modo che la carne prenda una bella colorazione scura e non dia l\u2019effetto di carne lessa.<\/p>\n\n\n<\/div>\n\n\n\n<div class=\"wp-block-altervista-step media-position-bottom\">\n<p>La reazione di Maillard, la caramellatura cio\u00e8 degli zuccheri presenti nella carne, former\u00e0 quella deliziosa crosticina, che render\u00e0 l\u2019arrosto irresistibile.<\/p>\n\n\n<\/div>\n\n\n\n<div class=\"wp-block-altervista-step media-position-bottom\">\n<p>Per girare la carne durante la rosolatura non bisogna utilizzare forchette o oggetti appuntiti, per evitare di forarla e far perdere quei liquidi preziosi che le renderanno morbida e succulenta al gusto. Utilizzare, quindi, due cucchiai di legno.<\/p>\n\n\n<\/div>\n\n\n\n<div class=\"wp-block-altervista-step media-position-bottom\">\n<p>Una volta ben rosolata, salare la carne, aggiungere il brodo e mettere il coperchio. Abbassare il fuoco e lasciare cuocere per 20 minuti, controllando che il liquido non si asciughi completamente, nel caso aggiungere un altro po\u2019 di brodo.<\/p>\n\n\n<\/div>\n\n\n\n<div class=\"wp-block-altervista-step media-position-bottom\">\n<p>Per cuocere bene un buon arrosto \u00e8 necessario avere una pentola pesante e spessa, in modo che possa diffondere il calore uniformemente, non faccia attaccare il cibo e cuocia lentamente.<\/p>\n\n\n<\/div>\n\n\n\n<div class=\"wp-block-altervista-step media-position-bottom\">\n<p>Per testare la cottura della carne, l\u2019ideale sarebbe avere a disposizione un termometro da cucina. Infilzare il Roast Beef col termometro e se la temperatura \u00e8 di 40 gradi si avr\u00e0 una carne al sangue, a 52 gradi sar\u00e0 rosata e a 58 gradi sar\u00e0 troppo cotta.<\/p>\n\n\n<\/div>\n\n\n\n<div class=\"wp-block-altervista-step media-position-bottom\">\n<p>Un altro metodo pi\u00f9 casalingo per constatare il grado di cottura \u00e8 quella di pungere la carne con uno stecchino, fino ad arrivare al cuore. Se il liquido che esce \u00e8 rosso la carne \u00e8 cruda, se trasparente rosata, se non fuoriesce nessun liquido \u00e8 molto cotta.<\/p>\n\n\n<\/div>\n\n\n\n<div class=\"wp-block-altervista-step media-position-bottom\">\n<p>Tirare fuori la carne dalla pentola e avvolgerla con della carta di alluminio.
