This recipe is an experiment done thanks to a friend of mine, another foodblogger like me, and I am very glad I tried because I love it, probably because I love pumpkin! So let’s do the recipe of rice with pumpkin and blue cheese!
Ingredients: for 2
- 200 gr pumpkin
- 1 onion
- 150 gr rice
- 25 gr bacon
- broth
- blue cheese
- oil
Let’s do it!
Let’s start cutting the bacon in small slices, put it in a frying pan and cook for few minutes without oil.
Now you have to cut the onion, and the papmkin in cube, then in a pan you have to put onion with oil until it will become brown, next add the pumpkin and broth, let it cook until the pumpkin will be soft. Finally you can put rice, it will be ready in more or less 20 minutes.
Remember to have some hot broth, because the one in the pot could finish and in that case you will need some hot broth immediately.
