The kind of dessert called Semifreddo are so convenient becouse you can leave them in the freezer for long time even if the never frozen thanks to the 23% of sugar inside the mixture. This happens becouse sugar has an antifreeze power. This time i am going to show you how to make Coffee Semifreddo.
- 150 gr whipped cream
- 50 ml coffee
- 150 gr di italian meringue
- 50 gr egg whites
- 100 gr sugar
- 20 gr water
Let’s start to make italian merengue making a sugar syrup with water and 80 gr of sugar, warmed up to 121°.
Start to whip egg whites with che last 20 gr of sugar, drizzle the syrup and continue to whip until the mug becomes cold.
Now add the coffe in the italian merengue and lighten with double cream.
Pour the mixture in a mold and leave it in the freezer for 12 hours, at least.
The day after, take it outside the freezer and garnish as you prefer, i put on the top of my glasses some double cream, melted chocolate, crumbled hazelnut and biscuits.
Coffee Semifreddo is ready to be served to your guests!
