Oggi vi propongo la mia versione dei supplì al telefono sono un antipasto squisito con un cuore filante di mozzarella, si chiamano così perché aprendoli a metà la mozzarella forma una sorta di filo che tiene attaccate le due parti. Scopriamo insieme come realizzarle!

Ingredienti
Salsa di pomodoro
- 700 gPassata di pomodoro
- 1Cipolla
- 3 cucchiaiOlio extravergine d’oliva
- 300 mlAcqua
- q.b.Sale
Ingredienti per circa 26 supplì
- 700 gRiso Carnaroli
- 100 gParmigiano reggiano
- 2Uova piccole
Per il ripieno
- 200 gMozzarella
Per la panatura
- 3uova grandi
- q.b.Farina
- q.b.Pane macinato
- 1 lolio di arachide per friggere
Preparazione
In una pentola capiente scaldate 3 cucchiai di olio con la cipolla tritata finemente, fate appassire, inserite la salsa di pomodoro e portate a bollore.
Versate il riso ed aggiungete l’acqua, salate e cuocete per 5/7 minuti girando spesso per non far attaccare il riso alla pentola.
Versata il parmigiano reggiano, mescolate bene, fate raffreddare completamente, inserite le uova sbattute e trasferite il riso in una pirofila.
Tagliate la mozzarella a bastoncini, tenete da parte.
Assemblaggio supplì
Prendete con un cucchiaio delle piccole porzioni di riso formate una pallina e fate un incavo al centro, riempite con la mozzarella e richiudete dando una forma ovale. Continuate così fino a terminare tutto il riso
Passate i supplì prima nella farina poi nelle uova sbattute e infine nel pane macinato.
In una padella antiaderente, inserite l’olio, raggiunta la temperatura adatta 180° circa, immergete i supplì e friggetele, appena diventano dorati trasferiteli su un piatto coperto con carta da cucina, per far eliminare l’olio in eccesso. Servite caldi.

700 g Tomato sauce
1 onion
3 tablespoons extra virgin olive oil
300 ml water
q.s. salt

700 g Carnaroli rice
100 g Parmesan cheese
2 small eggs
For the stuffing
200 g Mozzarella
For breading
2 large eggs

q.s. Ground bread
1) In a large saucepan, heat 3 tablespoons of oil and the onion cut into cubes and let it dry, insert the tomato sauce and bring to the boil. Pour the rice and add the water, salt and cook for 5 minutes, turning often so as not to stick the rice to the pan.
2) Pour the Parmesan cheese, mix well, let it cool completely, insert the beaten eggs and transfer the rice to an ovenproof dish.
3) Cut the mozzarella into sticks and set aside.
Assembly supplì
1) Take a small portion of rice with a spoon, form a ball and make a hollow in the center, fill with the mozzarella and close giving an oval shape. Keep going until you finish all the rice
2) Pass the croquettes first in the flour then in the beaten eggs and finally in the freshly ground bread.
3) Heat abundant oil in a pan, reach the appropriate temperature around 180 °, dip the supplì and as soon as they become golden transfer them to a plate covered with kitchen paper, to remove the excess oil. Serve hot.
Note
Potete preparare i suppli il giorno prima, cosi gli ingredienti hanno il tempo di insaporirsi meglio. Si possono congelare posizionandoli su dei vassoi al momento di utilizzarli togliete dal congelatore la sera prima e fate scongelare, completamente, in frigorifero.
