- 100 gpane macinato agli aromi
- 2 ciuffiPrezzemolo
- 2 cucchiaiParmigiano reggiano
- q.b.Olio extravergine d’oliva
- q.b.Peperoncino
- 1 spicchioAglio
Preparazione
1) Eliminate il bisso dalle cozze ovvero la barbetta che fuoriesce dalle valve, tirando verso l’esterno.
2) Lavate molto bene sotto l’acqua corrente.
3) Inserite le cozze in una casseruola con lo spicchio di aglio e il prezzemolo, coprite e a fiamma vivace fate aprire.
4) Sgocciolate, poi filtrate l’acqua di cottura e tenete da parte.
5) In una ciotola inserite il Pane macinato agli aromi , il formaggio, il sale e il peperoncino ammorbidite il tutto con il liquido filtrato e amalgamate con cura. Se il composto risultasse troppo morbido aggiungete ancora pane macinato.
6) Con un cucchiaio farcite le cozze e disponete su una placca da forno ricoperta con carta forno, condite con un giro di olio e cuocete in forno preriscaldato a 180 ° per 5 minuti.
7) Sfornate e servite subito.
