Ingredienti
- 500 gFarina di grano duro
- 300 gAcqua tiepida
- 8 gSale
- 12 gLievito di birra fresco
- 200 gProsciutto cotto
- 200 gScamorza (provola)
- q.b.Olio extravergine d’oliva
Preparazione
Versate in una ciotola capiente la farina con il sale e amalgamate bene, sciogliete il lievito in un pò d’acqua e aggiungete alla farina, proseguite versando l’acqua fino ad ottenere un impasto compatto e liscio.
Riponete l’impasto in una ciotola unta di olio, coprite con della pellicola per alimenti, fate lievitare in forno con la luce accesa per due ore.
Prendete l’impasto lievitato e stendete con il mattarello su un piano di lavoro infarinato, formando un rettangolo sottile.
Distribuite in maniera uniforme le fette di prosciutto cotto e di scamorza, spennellate i bordi con un po’ d’acqua “che fungerà da collante”, arrotolate dal lato più lungo,spennellate con l’olio.
Tagliate la pasta a fette della lunghezza di 6 cm e disponete in una teglia da 24 cm ricoperta con carta forno.
Fate lievitare fino a raddoppio, coperta con pellicola per alimenti in forno con la luce accesa.
Infornate in forno preriscaldato a 180 gradi statico per 30 minuti, sfornate, fate intiepidire e servite.

500 g Durum wheat flour
300 g Lukewarm water
8 g Salt
12 g Fresh brewer’s yeast
200 g Cooked ham
200 g Scamorza (provola)
q.s. Extra virgin olive oil
Pour the flour with the salt in a large bowl and mix well, dissolve the yeast in a little water and add to the flour, continue pouring the water until obtaining a compact and smooth dough.
Place the dough in a bowl greased with oil, cover with plastic wrap, let rise in the oven with the light on for two hours.
Take the leavened dough and roll out with a rolling pin on a floured work surface, forming a thin rectangle.
Spread the slices of cooked ham and scamorza evenly, brush the edges with a little water “which will act as an adhesive”, roll up on the longer side, brush with oil.
Cut the dough into slices 6 cm long and place in a 24 cm pan covered with parchment paper.
Leave to rise until doubled, covered with cling film in the oven with the light on.
Bake in a preheated 180 degree static oven for 30 minutes, take it out of the oven, let it cool and serve.
