Risotto strawberries and champagne

risotto fragola e champagne (FILEminimizer)

Ingredients for 4 people:
An entire bottle of champagne (0,75 l)
2 baskets of stawberries
320 g Carnaroli rice
1,5 l stock
1 scalogno
30 g butter
50 g double cream
50 g Parmesan cheese
Salt
White pepper

Execution:
Wash all the stawberries: half cut in 4 slice, the others put in a minipinner and reduce as liquid.
Cut the scalogno and fry in a pan with butter, then put and toast the rice.Than add champagne and let it evaporate. Add slowly the (brodo) untill, after 18 minutes on a middle flame, the rice is cooked.Just 5 minutes untill is ready, put the pieces of strawberries and the purea. At the end seick of the flame and add the parmisan to reach the right consistance. Have a good meal!
