Biscottini Natalizi di frolla glassati. I Biscottini Natalizi di frolla glassati sono dei fragranti biscotti di pasta frolla decorati con la ghiaccia ( potete utilizzare anche quella senza albumi ricetta ), sono perfetti da regalare o da appendere sull’albero, basta solo formare il forellino prima della cottura, per poi infilare un nastro, ed il gioco è fatto!
Biscottini Natalizi di frolla glassati
Ingredienti per la frolla per 50 biscottini:
- 400 g di farina 00
- 120 g di zucchero a velo
- 250 g di burro
- 4 tuorli d’ uovo
- 1 pizzico di sale fino
Ingredienti per la glassa:
- 15 g di albume
- 60 g di zucchero a velo
- 1/2 cucchiaino di limone
- colori alimentari ( a piacere )
Procedimento per i Biscottini Natalizi di frolla glassati:
Versare nella ciotola della planetaria con foglia il burro morbido ( lasciato fuori dal frigo 6 ore ) Unire lo zucchero a velo ed il sale fino ed azionare la planetaria 30 secondi con velocità 2, unire le uova lavorare altri 30 secondi, staccando dalle pareti il burro.
Infine aggiungere la farina, azionare la planetaria sempre con la foglia per altri 30 secondi, staccare sempre l’eventuale impasto attaccato alle pareti della ciotola. Togliere dalla ciotola portare la pasta frolla sul piano di lavoro per formare una palla, non ha bisogno di lavorazione.
Avvolgerla nella pellicola per poi lasciare in frigo 4 ore. Prima dell’utilizzo togliere la frolla dal frigo per 30 minuti , stenderla con un mattarello, circa 5 mm.
Utilizzare dei stampini taglia biscotti a forma natalizia, noi abbiamo utilizzato alberelli e palline. Metterli in teglia su carta da forno.
Infornare i biscotti a 170° per 15 minuti controllare la cottura che non si anneriscano.
Lasciare raffreddare i biscotti e preparate la glassa sbattere con le fruste l’albume con lo zucchero fino a quando non diventa bianco e lucido continuare per 1 minuto aggiungendo limone. Se lo desiderate dividete il composto ed aggiungere colori alimentari.
Riprendere i biscotti e decorare a piacere. Servire appendere o regalare!

Ingredients for the shortcrust pastry for 50 biscuits:
- 400 g of flour 00
- 120 g of powdered sugar
- 250 g of butter
- 4 egg yolks
- 1 pinch of fine salt
Ingredients for the glaze:
- 15 g of egg white
- 60 g of powdered sugar
- 1/2 teaspoon of lemon
- food colors (to taste)
Procedure for the glazed Christmas shortcrust biscuits:
Pour the soft butter into the bowl of the planetary mixer with leaf (left out of the fridge for 6 hours) Combine the icing sugar and salt and operate the planetary mixer 30 seconds with speed 2, add the eggs work another 30 seconds, removing the butter from the walls .
Finally add the flour, always operate the planetary mixer with the leaf for another 30 seconds, always detach any dough attached to the sides of the bowl. Remove from the bowl and bring the shortcrust pastry on the work surface to form a ball, it does not need processing.
Wrap it in cling film and then leave it in the fridge for 4 hours. Before use, remove the pastry from the fridge for 30 minutes, roll it out with a rolling pin, about 5 mm.
To use Christmas cookie cutters, we used trees and balls. Put them in a pan on baking paper.
Bake the biscuits at 170 degrees for 15 minutes, check the cooking that they do not turn black.
Allow the biscuits to cool and prepare the icing, whisk the egg white with the sugar until it becomes white and shiny continue for 1 minute adding lemon. If you wish, divide the mixture and add food colors.
Take back the cookies and decorate as desired. Serve, hang or give as a gift!
