Ultimate Salted Caramel Sauce, Ingredients:
- 1 cup (200 g) granulated sugar
- 6 Tablespoons (90 g) butter, cut into pieces
- 1/2 cup (125 ml) double cream
- 1 teaspoon salt
Heat the sugar up in a medium saucepan over medium heat, stirring constantly with a rubber spatula.
Sugar will form clumps, but eventually melt into a thick brown, amber-coloured syrup as you continue to stir. Be careful not to burn it.
Once the sugar is completely melted, add the butter immediately. Be careful as the caramel will bubble rapidly when the butter is added.
Stir the butter into the caramel until it is completely melted, about 2-3 minutes, they probably won’t bind, but this is normal, do not worry.
Pour in 1/2 cup of double cream, very slowly, while you keep whisking. The mixture will rapidly bubble and/or splatter, so be careful!!!
Allow the mixture to boil for 1 minute. It will rise in the pan as it boils, just as milk does if you forget it on the heat, keep an eye on it!
Remove soon after from the heat and stir in 1 teaspoon of salt.
Allow to cool down before using.
This Ultimate Salted Caramel Sauce will store for up to 2 weeks in the refrigerator, in an air tight container. Warm the caramel up in the microwave or bain marie for a few seconds before using.
That’ll never last two weeks without being eaten up!
