Apple Roses, A Pinch of Italy

Apple Roses, Ingredients

  • 1 puff pastry sheet,
  • 2 red apples
  • the juice of half lemon
  • 3 tablespoons of apricot jam
  • cinnamon
  • icing sugar for decorating
  • water

Prepare a bowl with some water and the lemon juice. Using an apple corer, remove the core from the apples, then cut the apples in half lengthwise. Cut the apples in paper thin slices and do not remove the peel as it will give the red color to your roses. Place the sliced apples in the bowl with lemony water so that they won’t get dark and microwave for about 3 minutes to make them slightly softer. If you prefer, you can also simmer the apple slices in the water in a small pan on the hob.

Unwrap the puff pastry over a clean and lightly floured surface. Using a rolling pin stretch the dough a little, trying to keep it in a rectangular shape. Cut the dough in 6 equal strips.

In a bowl, place three tablespoons of apricot jam and two tablespoons of water. Microwave for about one minute and mix well so that the jam will be easier to spread. Let it coold down for a couple of minutes, then spread the jam on the dough.

Preheat the oven to 375 F/190 C). Drain the apples and place them on a tray to cool down a little.

Place the apples on the upper part of the dough strips, skin up and overlapping them. Sprinkle with cinnamon if you like it.

Fold up the bottom part of the dough, just like a little blanket.

Carefully roll, seal the edge, and place in a muffin tin. No need to grease if the muffin mold it’s made of silicone. Otherwise, make sure to grease it.

Do the same for all 6 roses.

Bake the Apple Roses at 375 F/190 C static/170 C Fan for about 1 hour, until fully cooked.

Make sure the pastry is fully cooked on the inside before removing the roses from the oven! If after 30 minutes the apples on top look fully cooked, cover the Apple Roses with tinfoil, and cook for further 30 more minutes to avoid undercooking the puff pastry.

Sprinkle your Apple Roses with icing sugar and enjoy!
