INGREDIENTI:
500 g di farina di kamut
280-300 g di acqua circa (la farina di kamut assorbe un po’ più di acqua rispetto alla farina di grano tenero)
20 g di lievito di birra
20 g di strutto
10 g di malto
8 g di sale
latte q.b.
semi di sesamo e girasole
PROCEDIMENTO
Nella planetaria iniziare impastando la farina, il lievito sbriciolato e l’acqua che andrà aggiunta un poco alla volta. Aggiungere quindi il malto e quando si sarà formata un impasto liscio e incordato anche lo strutto. Per ultimo aggiungere il sale. Si deve ottenere un impasto morbido ma non appiccicoso.
Coprire e lasciare lievitare per 20 minuti circa.
Dopo questo tempo, dividere l’impasto in 4 parti e formare delle pagnotte. Far lievitare coperte per circa 40-50 minuti.
Prima di infornare spennellare con poco latte e cospargere con i semi di girasole e papavero.
Infornare a 210° per circa 30-40 minuti.
Kamut bread with Sesame and sunflower seeds
Today I was looking for a soft bread with kamut flour in stores near my home and, not finding it, I figured I’d do it myself. The result was astonishing! I used yeast and made a soft bread, tasty and easy to make. Also fast!
Ingredients:
500 g whole kamut flour
280-300 g of water (the kamut flour absorbs a little more water than wheat flour)
20 g fresh yeast
20 g lard
10 g of malt
8 g salt
milk
Sesame and sunflower seeds
PROCEEDINGS
Start by mixing flour, crumbled yeast and water that must be added a little bit at a time. Then add malt and when you have obtained a smooth dough add lard. Finally add salt. You should get a soft but not sticky dough.
Cover and let rise for 20 minutes.
After this time, divide the dough into 4 pieces and form into loaves. Let them rise covered for about 40-50 minutes.
Before baking brush with milk and sprinkle with sunflower and poppy seeds.
Bake at 210 degrees for about 30-40 minutes.
