Homemade casarecce with Italian sausage

Suzanne and her crew are as busy as farmers can be. The Farm produces a wide range of products from chickens to eggs, worms to worm composters, pigs to sausages and speaking of sausages … their Italian sausage is the best we have tasted outside of Italy!

The Italian sausage produced by The Funky Chicken Farm is a beautiful balance of flavours including the all important fennel. Once it hits the pan we are transported to the Amalfitana coast and reminded of some rather fine broccoli rabe and sausage we ate there at a friends home. Wonderful!

We are currently drying out our casarecce and need to test the time it takes to cook. As a guide for you all, if your dried pasta takes longer than 8 minutes to cook, you know you are about to the enjoy the good stuff! Turns out that our casarecce takes between 8 and 10 minutes and while it was boiling, we fried up some sausage. Thank goodness for The Funky Chicken!

We set about to make up a dish of our Flavours From The Farm Casarecce, literally made with spinach, basil and other fresh stuff available that we can incorporate into the dough.

Ingredients for 2 – 3 people

  • 8 – 9 oz (250 grams) The Big Dream Factory Flavours From The Farm Casarecce
  • 2 tablespoons extra virgin olive oil
  • 2 Funky Chicken Farm Italian sausage
  • 1 large tomato
  • 1 cup tinned, chopped tomatoes
  • 1 oz (25 grams) butter
  • Salt and pepper to taste

  1. Add the casarecce to a pan of lightly salted boiling water until cooked to al dente.
  2. Meanwhile, add the oil to a frying pan over a medium heat then squeeze small amounts of sausage from it’s skin and add it to the hot oil (sorry Suzanne, we didn’t need it).
  3. Fry and turn the lumps of sausage until they have browned.
  4. Add the diced, fresh tomato and cook until it begins to reduce (just a few minutes).
  5. Add the tinned tomatoes and bring it all to a boil.
  6. Check the seasoning and salt or pepper if necessary before adding the butter and reduce the heat to low.
  7. Once the pasta is ready, lift it from the water to the frying pan and stir to combine. The pasta will continue to cook and soak up the flavours from the sauce.
  8. Serve, enjoy and don’t forget to put your next order in with The Funky Chicken Farm for some more of that Italian sausage!
