Fini Fini con piselli e guanciale

fini fini 2Fini Fini con piselli e guanciale, la pasta all’uovo fatta a mano e cucinata al momento è sempre gradita ed è sempre una festa a tavola. Oggi avevo a disposizione delle uova casarecce, così ho pensato di fare una buona pasta veloce veloce. Per la pasta io uso 1 uovo per 100 gr di pasta.

Per 6 persone fettuccine fatte in casa. oppure 600 gr di fettuccine già fatte

  • 300 gr di farina 00
  • 300 gr di farina grano duro
  • 6 uova

Per il condimento ho usato 100 gr di guanciale a dadini 

  • 1 piccola cipolla
  • 1 carota media
  • 1 costa di sedano
  • 500 gr di piselli fini
  • peperoncino e sale q.b..
  • 250 gr di besciamella
  • 100 gr di parmigiano grattugiato


  1. In una pentola scaldare l’olio e far soffriggere il peperoncino, la cipolla tritata, la carota tagliata finemente e sedano infine aggiungi il guanciale a dadini e lascia cuocere per 5 minuti a  fiamma bassa, adesso metti i piselli , il sale ,metti un coperchio.
  2. Prima di spegnere metti la besciamella e gira per mischiare il tutto, nel frattempo cuoci la pasta al dente circa 5 minuti scolarla ma non privandola di tutta l’acqua di cottura,versa in una grande terrina il condimento e la pasta aggiungi il parmigiano grattugiato mescola e servi in fondine.

Nearly all foods served at an Italian table have been gathered from someones garden or field, and is then served alongside homemade, pasta, gnocchi, and countless dishes that could not be recounted in this tiny space since each family's knowledge is unique ... well, you can only imagine. I have walked Rome, climbed to the top of the Vatican, seen Milan, Venice, the Cinque Terre, climbed mountains, walked The Path of the Gods, wandered the great city of Napoli, lived on the little Island of Ponza and gathered a pile of friends, family and photographs as well as invalueable experience along the way. I became a new immigrant to the U.S.A on December 15th, 2013. With the support of many great friends and a passion (bordering on obsession), I am here in search of the American Dream and to bring you the natural flavours and vibrant colours of Italy. All my pasta, gnocchi and biscotti are made by hand just as I saw Italians do in homes and good restaurants all over Italy, every day and sometimes, twice a day.
