Cartellate – South Italy

Hi everyone! here it is the recipe for the traditional South Italy Christmas sweets called ” Cartellate”. They must be covered with ficus cooked wine but it’s a little difficult to find it..then you can use honey alternatively.

Cartellate

Ingredients:

500 g flour

1 egg

one small glass of olive oil

a pinch of salt

oil to fry

white lukewarm wine

ficus cooked wine(or honey) to cover

Method:

Knead with your hands flour, egg, salt and egg adding white wine until the dough is soft but  a little dry. Then cut the dough in small pieces and roll out them . It must be really thin._DSC0187

Now cut many stripes:

Then one by one begin to give them the shape of “cartellate”. You can do this by pinching at regular intervals each stripe and then turning it on itself and pinching again this way:

When you finished it , fry cartellate in very hot oil until they become little brown( not much).

Finally get the cooked wine (or honey) , put it in a pot and let it boil:

and put one by one each cartellata into the pot until they’re covered with wine.

The final result will be this:
