For the ’ occasion couldn't miss the typical zeppole di San Giuseppe. At my house then St. Joseph's “great party”, because in addition to fasteggiare father's day we celebrate my name day. And then I pet and pet my family with this delicious sweet traditional.

Le zeppole di San Giuseppe sono delle ciambelline di pasta choux, more commonly known as pasta nutela, fritte e decorate con crema pasticciera. I prefer them baked to have a sweet little’ more light and digestible.

Well! I have to say that the teacher does not denies ever!

They are really good………Trust! :-P

Vi trascrivo le quantità originali degli ingredienti, io comunque ho dimezzato le dosi.

Zeppole San Giuseppe!

Ingredients:

  • 1080 g eggs

  • 735 g water

  • 665 g butter

  • 105 g whole milk

  • 700 g flour 00

  • a pinch of salt

In una capiente pentola mettere l’acqua fredda con il burro a pezzetti ed il sale. Let melt the butter on low heat, After the butter has melted raise heat and bring to a boil. Pour the sifted flour in one fell swoop and stir rapidly with a wooden spoon until you get a homogeneous dough that is detached from the walls of the pot perfectly.

Transfer the mixture into a planetary ’ or into a bowl and add the milk and then a few at a time until they eggs incorpore very well. The final consistency of the dough ’ dev ’ be like cream.

Trasferire tutto in una sac a poche con beccuccio a stella e formare le ciambelline sulla placca precedentemente spennellata con burro e a cui è stato tolto l’eccesso di burro con della carta da cucina; This is because the ’ excess butter does not facilitate the bulge of Donuts.

Bake at 220° C for about 15 minutes.

Let cool and decorate them with zeppoline custard and a cherry confit or in syrup like I did.

Sprinkle with powdered sugar and…………good tasting! :-P
