Even if bell peppers are available all year-round, they are at their best in summer. I love them. So now I’ll give you a very easy to make and yummy recipe: baked bell peppers! A very colourful and delicious side dish. Try them!
BAKED BELL PEPPERS
INGREDIENTS (for 2/3 people)
- 1 red bell pepper
- 1 yellow bell pepper
- breadcrumbs
- 2 table spoons parmesan cheese
- salt
- 1 clove of garlic
- parsley
- extra virgin olive oil
DIRECTIONS
Preheat the oven to 180°.
Wash the bell peppers and slice them lengthwise. Remove seeds and white filaments. Roast them on a cast-iron grill pan. Turn them a few times during the cooking process until they soften. (It is possible to use frozen grilled bell peppers. In this case let them defrost in the fridge).
Grease a baking pan with oil and spread some breadcrumbs on it.
Peel away the skin from the peppers (I left some) and put them in the baking pan.
Chop parsley with garlic.
In a small bowl mix 2 table spoons of breadcrumbs with parmesan cheese and add parsley and garlic.
Scatter this mixture over the bell peppers and drizzle with oil.
Bake for 10 minutes in the preheated oven, then turn the oven to grill for 2/3 minutes.
Take the baked bell peppers out of the oven and serve!
