Ham ragu’ tagliatelle
Per la pasta
150 gr di farina 00
50 gr di farina semola rimacinata
1 pizzico di sale
olio evo q.b.
Per il sugo
1/2 cipolla
1 costa di sedano
1 carota piccola
olio evo q.b.
300 ml di brodo di carne
250 ml di passata di pomodoro
1 foglia di alloro
150 di prosciutto crudo
100 ml di latte
parmigiano reggiano q.b.
Preparazione
Preparare la pasta impastando le 2 farine con l’uovo
Lasciare riposare un luogo fresco per 30 minuti poi tirare la pasta e formare le papparedelle
Preparare il sugo
Tritare lo scalogno il sedano e la carota e farli rosolare a fuoco basso per 4 minuti con 2 cucchiai di olio evo
Tritare grossolanamente il prosciutto e aggiungerlo al soffritto con una foglia di alloro
Cuocere 5 minuti poi aggiungere il latte
Dopo qualche minuto aggiungere 1 mestolo di brodo e la passata di pomodoro
Cuocere coperto a fuoco basso per 1 ora aggiungendo brodo se necessario
Lessare la pasta e scolarla nella pentola del sugo
Servire con abbondante parmigiano reggiano grattuggiato

For pasta
150 grams of 00 flour
50 gr of re-milled semolina flour
1 pinch of salt
evo olive oil
For the sauce
1/2 onion
1 celery coast
1 small carrot
evo oil q.b.
300 ml of meat stock
250 ml of tomato sauce
1 bay leaf
150 of raw ham
100 ml of milk
parmigiano reggiano cheese
Preparation
Prepare the dough by mixing the 2 flours with the egg
Form a dough loaf and cover with the film
Leave a fresh place to rest for 30 minutes then pull the dough and form the papparedelle
Prepare the sauce
Chop the shallot celery and carrot and sauté over low heat for 4 minutes with 2 tablespoons of olive oil.
Coarsely chop the ham and add it to the sauté with a bay leaf
Cook 5 minutes then add the milk
After a few minutes add 1 ladle of broth and tomato sauce
Cook covered over low heat for 1 hour adding broth if necessary
Boil the pasta and drain it in the saucepan
Serve with plenty of grated Parmesan cheese
