Omelette with Aubergines and Tomatoes

Here is a delicious recipe for a simple but appetizing omelette:

Frittata Melanzane Pomodorini

Ingredients [banner size = “120X600” type = “default”]
(for 2 people)

  • 4 eggs;
  • 100 gr. breadcrumbs;
  • 1 cup of milk;
  • An aubergine from which to make 8-10 slices;
  • 5-6 small tomatoes;
  • salt, pepper, oil to taste.
  • Ingredient to taste: stracchino or other fresh cheese.

Recipe

  • Slice the aubergines not too thin.
  • Heat a grill and place the aubergines in it.
  • Grill aubergines and cook them.
  • Slice the tomatoes.
  • Beat the eggs and add the breadcrumbs and milk.
  • Heat a little oil in a pan, pour the eggs and place aubergines and tomatoes on top.
  • Cook well and then overturn the omelette with the help of a plate.
  • You can serve the omelette as it is or you can add pieces of stracchino.
