Omelette with Aubergines and Tomatoes
Here is a delicious recipe for a simple but appetizing omelette:

(for 2 people)
- 4 eggs;
- 100 gr. breadcrumbs;
- 1 cup of milk;
- An aubergine from which to make 8-10 slices;
- 5-6 small tomatoes;
- salt, pepper, oil to taste.
- Ingredient to taste: stracchino or other fresh cheese.
Recipe
- Slice the aubergines not too thin.
- Heat a grill and place the aubergines in it.
- Grill aubergines and cook them.
- Slice the tomatoes.
- Beat the eggs and add the breadcrumbs and milk.
- Heat a little oil in a pan, pour the eggs and place aubergines and tomatoes on top.
- Cook well and then overturn the omelette with the help of a plate.
- You can serve the omelette as it is or you can add pieces of stracchino.
