Tagliatelle with Ragu Sauce

This is not classic ragù bolognese recipe but a different version. The ragu sauce with veggies is without tomatoes ad it is very easy to prepare. It’s good with pasta specially with tagliatelle. In this recipe I used a special kind of tagliatelle called “paglia e fieno”. They are tasty and both green (because of spinachos) and yellow (because of eggs). Are you ready to cook with me? Ingredients:

  • 1 chopped red onion
  • 1 chopped garlic
  • fresh parsley
  • 2 carrots
  • 1 medium zucchini
  • 100 grams minced veal meat
  • 200 grams minced pork meat
  • 3 spoons of extravirgin olive oil
  • salt
  • a pinch of ginger
  • a pinch of tumeric
  • 1/2 cup of white wine
  • 1cup of hot water

Directions:

  1. Heat oil in a large heavy pot . Add garlic, onion, chopped parsley, grated zucchini, grated carrots, tumeric,ginger, minced meat (both veal and pork). Cook for 5 minutes
  2. Add white wine and cook for 5 minutes untill it drains.
  3. Add water and cook for 10 minutes more
  4. Cook tagliatelle in salty boiling water for 5 minutes. Drain tagliatelle
  5. Combine tagliatelle with ragu sauce in the pot. Mix for 1 minute
  6. Serve with grated Parmesan
