Anche se con un giorno di ritardo vi scrivo la ricetta delle mie zeppole, magari vi viene voglia ugualmente, non si devono fare solo ed esclusivamente per la festa del papà!!! Non sono bellissime da vedere….ma sono molto buone!
Ingredienti:
250 g farina
250 ml acqua
4-5 uova
65 g strutto
mezza bustina di lievito
sale
crema pasticcera
amarene o marmellata di amarene ( io ho usato quella di more!!!)
olio per friggere
In una pentola far sciogliere l’acqua, lo strutto e un pizzico di sale, quando lo strutto è fuso versare tutta la farina e mescolare cercando di far amalgamare bene il composto e far cuocere per qualche minuto sempre girando.
Passare il composto nell’impastatrice e azionarla, usando la foglia per impastare, così facendo l’impasto si amalgama bene e si raffredda prima. Quando al tatto è tiepido incorporare un uovo per volta, fino a completo assorbimento, attenzione con il quinto uovo, ne potrebbe bastare anche meno di uno quindi consiglio di romperlo dentro una ciotola e versarlo poco per volta.
Il composto deve risultare omogeneo ma non troppo liquido, raggiunta la consistenza desiderata aggiungere il lievito e far girare un’altro minuto.
Nel frattempo mettere e scaldare l’olio, formare quindi le zeppole, aiutandosi con una sacca da pasticcere o con una siringa con la punta dentata di media grandezza, si un pezzetto di carta da forno oleato, quando l’olio è arrivato a temperatura immergere la carta da forno finchè non si stacca l’impasto, far friggere prima da un lato e poi dall’altro finchè non risulta ben gonfia e dorata, scolare la zeppola su carta assorbente e ripetere l’operazione con un altra zeppola fino a fine impasto.
Se vedete che con un giro di impasto risultano troppo basse fate due giro uno sull’altro e poi friggete, non vi preoccupate in cottura si amalgamano completamente, io ho fatto così.
Quando si saranno raffreddate prendere una sacca o siringa in modo da poter fare un ciuffetto di crema sul quale metteremo la nostra amarena o la marmellata.
