I love puddings but I don’t do it often. This week I made one after long time. I’m quite happy with this recipe that I found in my old recipes book. A pudding that everyone likes and that you can customize and garnish as you wish.
Ingredients for the vanilla pudding:
- 500g Milk
- 90g sugar
- 80g potato starch (or two teaspoons of agar agar)
- 2 eggs
- 1 vanilla stick
Ingredients for the chocolate pudding:
- 500g Milk
- 90g sugar
- 80g potato starch (or two teaspoons of agar agar)
- 2 eggs
- 100g dark chocolate
Process for the vanilla pudding:
- Boil the milk and vanilla bean cut for long in a saucepan.
- let it warm up for 5 minutes. Meanwhile work the eggs with the sugar until they are frothy and light.
- Add the flour and mix everything.
- Strain the hot milk and add slowly in the bowl with the remaining ingredients.
- Whisk well and trying to avoid lumps. Pour the mixture into a large bowl or a form for puddings (I used a classic glass bowl).
- If you use agar agar you have to add it when the milk is filtered, then bring to a boil, and only now you can combine it with the other ingredients
Process for the chocolate pudding:
- Take a glass of milk from 500g provided by the recipe (proceed in the same way if you use agar agar), add the flour and stir with a spoon until this is dissolved.
- Now add all the milk and stir well. Place the milk over the heat in a saucepan with the chopped chocolate.
- Stir with a whisk until the mixture has reached the boiling Separately, beat the eggs and sugar until frothy and light. United to file the mixture with the milk and chocolate, mix gently.
- Pour the mixture over the vanilla pudding.
- Let stand for 30 minutes out of the refrigerator.
- Once the pudding has cooled, fold the bowl in the refrigerator for 4 hours before serving.
