Easy peasy, orange squeezy 🙂 I said when I finished baking these Oats and Orange Brownies.
Actually, you don’t have to squeeze a thing if you own a Vitamix, and the blender will do everything for you. The Oats and Orange brownies will come together in a few minutes: great taste without too much guilt.
This recipe was born out of necessity. In the family we are trying to eat more “clean” food. Doing so it’s hard when one craves for sweets, you know!?.
So, as far as sweets go, this one is not too bed, and it tastes great!!!
I used Coconut sugar, that it is low on the glycemic index, also used Oats with their nice texture. Finally I added Orange for flavor and for its acidity to balance the richness of the Sour cream. As fare Cocoa goes, I like to use Dutch cocoa since it’s nice and dark and with less acidity than the traditional one.
Overall, a nice, creamy, almost cake-like textured brownies! Try them today!
OATS AND ORANGE BROWNIES in the VITAMIX
Ingredients for 6 people.
One 8 x 4 loaf pan coated with foil and sprayed with Coconut spry.
Level: Easy
Time : 1 hour including bake time
INGREDIENTS:
3/4 C sour cream (ok to substitute with yogurt )
1/4 C milk (ok to substitute with almond milk)
1/2 C EACH of:
-Dutch processed cocoa
-Old fashion oats
-Coconut sugar
1 Egg
a pinch of salt
1/2 Â t baking powder
1/2 Â t baking soda (or just 1 t baking powder)
1 t vanilla
1/3 orange (ok to leave the skin on if thin)
1/4 C chocolate chips (semi sweet or bittersweet)
DIRECTIONS:
Pre heat oven to 350F convection or 375 F static.
Place all the ingredients in the order given into the blender.
Blend on high for 1 minute. Then add the Turbo feature and blend 30 more seconds.
Pour into the prepared pan and bake for about 30 minutes or until done. Test inserting a cake tester to check.
Let cool for a few minutes, then reverse the cake in the serving dish of choice. Garnish with sliced oranges and dust with powder sugar before serving.
NOTE: the Oranges I used to garnish and for flavor are CARA CARA.
Cara Cara Navel oranges are known for being extremely sweet with slightly lower acidity than regular Navels. They may look like Navel oranges on the outside, but the seedless interior has a rich pink hue due to the natural presence of lycopene. Cara Cara Navel oranges are available from December through May.
