Ingredienti
1 Patata cruda
450 gr di Acqua
300 gr. di Farina 00
300 gr. di Farina 0
1 Lievito di Birra
1 Cucchiaino di Zucchero
2 Cucchiaini di sale fino
Pomodorini Datterini
Olive nere o Taggiasche
Olio EVO
Origano.
Preparazione
Tritate la patata finemente, in una ciotola inserite la patata tritata e il lievito sbriciolato, aggiungete le Farine, l’acqua lo zucchero e per ultimo il sale… impastate il tutto in una planetaria o con la frusta per gli impasti, dato che quest’ultimo resterà alquanto molliccio e appiccicoso. Ora coprite con un canovaccio umido e lasciate lievitare per circa due ore, badando che la ciotola sia molto capiente, altrimenti l’impasto fuoriuscirà.
Stendete l’impasto su due Teglie che avrete coperte con carta forno bagnata con acqua, strizzata e unta con un pennello intriso di olio, guarnite con i Pomodorini tagliati a metà, le Olive, l’origano e un filo di Olio EVO. Infornate in forno preriscaldato 200° per circa 20 minuti… Nella parte bassa del forno avrete messo una leccarda contenente dell’acqua, che creerà la giusta umidità.
