Pesce al forno con patate e pomodorini

Per chi vive in Sardegna (e non solo) il pesce al forno con patate e pomodorini è un must in cucina; i nostri mari ci regalano tanti molluschi, crostacei e pesci fra i quali degli ottimi pesci bianchi che si contraddistinguono per avere  pochi grassi e quindi un apporto calorico contenuto (es. l’orata, la sogliola, il pesce serra, il nasello, etc.). Oggi vi presento una semplice ricetta che ha come elemento principale il pesce serra (pescato da un amico nel Golfo di Cagliari), ricco di una polpa bianca e morbida e con un sapore delicato che viene esaltato con la cottura al forno con patate e pomodorini.

Ingredienti per 4 persone

1 pesce da 1 kg
Prezzemolo
aglio tritato finemente
origano
7 patate di media grandezza
pomodorini (quantità a piacere)
1 pomodoro secco grande
olio extravergine di oliva
sale
vino bianco

Preparazione

Prima di tutto pulite il pesce, squamatelo, lavatelo e togliete le interiora. Io ho usato il pesce serra ma si può optare anche per l’orata o la spigola etc..

Pelate le patate e tagliatele a rondelle, dopodiché fate lo stesso con i pomodorini, mettete tutto in un contenitore e condite con olio, sale, prezzemolo, aglio e origano rigirando accuratamente tutti gli ingredienti. Ricoprite una teglia con la carta da forno e ponete nel fondo le patate con i pomodorini conditi per poi adagiare sopra il pesce a sua volta condito nella tasca interna da cui avete eliminato le interiora (il mio pesce serra era troppo grande perciò l’ho diviso in due parti).

Versate l’olio extra vergine di oliva a filo, un pò di sale e il pomodoro secco tagliato a pezzi  per poi infornare nel forno preriscaldato in modalità ventilata a 180°.

Per un chilo di pesce necessiteranno circa 30/40 minuti. Durante la cottura bagnate il pesce con il sughetto che si crea sul fondo della teglia e 10 minuti prima di terminare la cottura sfumate con il vino bianco.
