Ingredienti per la pasta brisè:
300 gr di farina 00 150 gr di burro fredoo 100 gr di acqua gelata sale q.b.Ingredienti per il ripieno:
1 litro di latte intero 100 gr di burro 6 cucchiai di farina noce moscata q.b. 4 cucchiai di parmigiano 250 gr di piselli lessati 120 gr di prosciutto cotto tagliato sottile1 spicchio d’aglio

Preparazione pasta brisè:
1. nel mixer frullate la farina con il burro freddo a pezzetti fino a ridurre in un composto sbriciolato 2. mettete poi il composto su di una spianatoia o ciotola fredda,formate la classica fontana e al centro poco alla volta aggiungete l’acqua gelida con il sale. Impastate velocemente fino ad ottenere una palla compatta ed omogenea 3. avvolgete la palla nella pellicola per alimenti e conservate in frigorifero per 30-40 minuti. Passato il periodo rivessite una pirofila con carta forno e foderate con la pasta brisèPreparazione ripieno:
1.preparate ora la besciamella: mettete il burro a pezzetti in una casseruola, accendete la fiamma a fuoco basso, man mano aggiungete la farina, mescolate energicamente con un cucchiaio di legno, quando il burro avrà assorbito tutta la farina, aggiungete il latte bollente e mescolate con una frusta fino a raggiungere una consistenza cremosa.
